A restaurant overlooking the fields of the Okanomachi region of Biei, where the hilly rural landscape is breathtaking. It is the seventh restaurant founded by chef Nakamichi, who also oversees the French restaurant Moliere in Sapporo. Moliere’s cuisine brings out the flavors found naturally in the ingredients, and has continually promoted the notion of tasting Hokkaido’s flavors locally in their region of production. Start your meal with bread made from Biei-produced wheat, and finish by sinking your knife into a mille-feuille pastry so flaky you’ll be surprised. By the end, you too will come to understand the vivid colors of this season’s vegetables and the flavors found in each ingredient. The hilly Biei landscape that spreads out before you on the other side of the window is just another one of the restaurant’s flavors. The landscape changes its expression according to each season and the weather. Gazing at the soil on the property being turned over, visitors look forward to the day the scenery changes to fields of wheat.
