Sato Suisan is a seafood processing company that continues to pass on the traditions of Hokkaido’s salmon cuisine. Some of its most popular products include Jukusei aramaki-zake salmon, which is salmon rubbed with salt and aged slowly, and Kanshiobiki, which is dried salmon first aged in salt and then dried in the cold wind after removing the salt. Premium quality all-natural autumn salmon landed in Ishikari or Erimo along the coast of Hokkaido from early September to late October is used together with a fermentation process to really draw out the savory taste of the fish. Be sure to visit the company’s store as some products are made available for tasting. Kaisen Marudai Tei, a restaurant in Susukino owned and operated by the company, serves up grilled salmon processed by Sato Suisan.
